How to Make Japanese Deep Fried Chicken, Kara-Age

       As I mentioned in my previous entry, I made Japanese deep fried chicken for dinner last Saturday. In Japan, deep fried chicken is called "kara-age" or "wafu kara-age." Kara-age in Japan usually tastes different from regular deep fried chicken in the U.S. It's crispy, juicy and savory. Fresh chicken thighs are usually marinated in some seasoning including soy sauce, garlic, and etc. Then, those are lightly coated with potato starch, which is called katakuriko (片栗粉) in Japanese. By using potato starch, you can make nice and crispy kara-age. :)  Kara-age is one of my favorite Japanese foods, and I think it is also loved by everyone regardless of race. If you have never tried Japanese deep fried chickens, you really should try them, and I think you will definitely fall in love with them. :) You can find kara-age at most authentic Japanese restaurants, and you can also cook kara-age at home. Today, I'm going to share how to cook kara age with you.
Japanese Deep Fried Chicken, Kara-age (唐揚げ)

Ingredients

2 pounds of chicken thighs (cut them into bite sizes)
6 tablespoons of soy sauce
2 tablespoons of sake
2 teaspoon of sugar
2 teaspoon of grated ginger
2 teaspoon of grated garlic
2 tablespoons of sesame oil
4 tablespoons of potato starch
vegetable oil (for deep-fry)


1. Mix soy sauce, sake, sugar, ginger, garlic and sesame oil.

2. Marinate chicken in mixture for an hour.

3. Add potato starch and mix them thoroughly.

4. Deep-fry them until cooked.

5. Enjoy!

The Best Japanese Instant Curry! (S&B Golden Curry & House Foods Curry Sauce)

       Have you ever tried Japanese Curry? As I mentioned in my previous entry, Japanese curry is very delicious, and I think everyone will love it. I purchased these Japanese instant curries at Japanese supermarket just the other day. These are some of the most popular Japanese instant curry products in Japan. When I lived in Japan, I sometimes had these. These are very easy to cook, so these are perfect when you are super busy.

         Today, I uploaded this video which is about how to cook these Japanese instant curries. :)



      This is S&B Golden Curry Medium Hot. This curry was one of my favorite ones!

     As you can see the photo below, their vegetables such as potatoes and carrots were pretty big! Their curry was nice and thick texture. It tasted like homemade Japanese curry. :)

       This is House Foods Curry Sauce Medium hot. They are named Kukure curry (ククレカレー) in Japan.

      Compared to Golden Curry, House Foods Curry Sauce was more watery. It tasted like one Japanese restaurants serve. :)

        Japanese curry is not very spicy, so if you love spicy foods, you should try hot ones.

       If you have never tried Japanese instant curry, you really should try them. :) You can purchase these at any supermarkets in Japan. If you live in the U.S. like me, you can find these at Japanese supermarkets or amazon.com.

Japanese Deep Fried Chicken, Kara-age

      Tonight, I made deep fried chicken for dinner. I usually purchase chicken breasts, but today I bought chicken thighs which are suitable for Japanese deep fried chicken. It was juicy and tasted great! I'll share the recipe next time.

How to Turn Mason Jars into A Coffee Grinder and Compact Blender

      Do you know you can turn mason jars into a coffee grinder and compact blender just like magic bullet? Regular mouth mason jars perfectly fit the base of my Oster blender. I often use mason jar as a compact blender when I make Frappuccino because I only need to wash one jar! :) This hack also works grinding coffee beans. :)

■What You'll Need■
regular mouth mason jar (*wide mouth doesn't fit)
Oster blender (This method might also work most other blender too.)



■ Cold Brew Coffee ■
60g of coffee beans
600 cc of water


■ Caramel Frappuccino ■
1 tablespoon of sugar
30 cc of chilled espresso
50 cc of milk
1 tablespoon of caramel syrup
3/4 cup of iced cubes

 for garnish
whipped cream

Unagi

     Unagi is a Japanese freshwater eel. Japanese people eat unagi during summer especially on the Midsummer Day of the Ox, which is called Doyo Ushi No Hi (土用丑の日) in Japanese. Because unagi has a lot of nutrition, including vitamin A, B, D, E, iron and calcium people eat unagi to maintain health during very hot summer days. The Midsummer Day of the Ox of 2015 was July 24 and August 5, so my husband and I bought frozen grilled unagi at Japanese supermarket and made grilled unagi bowl on July 24.

        These days, unagi has been more and more expensive in Japan. We were lucky that we bought this pack of frozen grilled unagi for about $10, which was very reasonable for it.

       We also bought this Kikkoman Unagi Sauce among with frozen grilled unagi at a Japanese supermarket. Our grilled unagi had been already seasoned, so we didn't need this sauce much. However, this sauce is perfect for seasoning chicken bowl and yakitori. Just grill small pieces of chicken and onion, and season with Unagi Sauce. Add green onion if desired.

Emergen-C

      I've had a sore throat since last night sadly. Today, and I also have joint pain among with a sense of fatigue. It's been over a year since I had a cold last time. :( I've tried to edit videos this morning, but I gave it up. When I have a cold, I always take plenty of water and vitamin. Today, I took Emergen-C Super Orange, which contains 1000 mg of Vitamin C. I like Emergen-C because it tastes great. I hope I will recover soon.

Hiyashi Chuka, Japanese Summer Cold Noodles

      This month, my husband and I have eaten hiyashi chuka, a Japanese chilled ramen noodles, several times. Japanese people eat cold noodles, such as hiyashi chuka and somen noodle at home during hot summer season.

       You can easily make delicious hiyashi chuka with using Myojo Japanese Cold Noodle pack, which contains noodles and hiyashi chuka sauce. You need to prepare toppings in addition to cold noodle. Popular topping are tamagoyaki, tomato, cucumber and ham.

        Myojo is a huge Japanese instant noodle manufacture company which established in 1950. I usually buy Myojo hiyashi chuka noodles at Japanese supermarkets. You can also purchase on Amazon as well. This Myojo Chukazanmai Hiyashi Chuka Instant Cold Noodle has so many positive reviews in Japan and Amazon U.S. Some Japanese people reviews it tastes actually better than one at restaurants. I think I should try it someday. :)

Sushi Boy

      Sushi is my most favorite Japanese food. Last night, I got the urge to have sushi for dinner, so my husband and I went to our local Sushi Boy, a Japanese sushi restaurant. At the entrance of this restaurant, there was a notice of August special menus on the wall. Their Kobe special, which is a 15-piece sushi and miso soup, was on sale for $8.95! 


        We decided to have Kobe special. :)

       It's hard to find a good sushi restaurant in my local area, but their sushi is always pretty good by my Japanese standards. Sushi Boy is the branch of a famous Japanese sushi restaurant in Japan, Kozosushi (小僧寿し), so they keep making sushi which Japanese people like. One of my local Sushi Boy branches has completely closed recently, so I hope they will survive in a competitive restaurant business here.

How to Make a Chocolate Cake with Protein Powder

       Today, I made this chocolate cake with protein powder. As you can see the photo below, its figure was not perfect because I made it with a Pyrex 2-cup measuring cup in a microwave. I garnished it with whipped cream and cocoa powder but the cream eventually slipped from the top. Nonetheless, it was so delicious! :))

      I first referred to this video, which shows very clever recipe, to make a protein cake a few months ago. I made it exactly as he showed in this video but mine wasn't as solid as his cake although it tasted so delicious. That's why I ended up adding flour and using more baking powder today. I also reduced microwave time. Finally, it turned out well solid chocolate cake. :)  I'm going to share with you how I made it.


  ■Ingredients

1 egg
3 tablespoons of milk
1 scoop of chocolate protein powder
2 tablespoons of cocoa powder
1 teaspoon of baking powder
2 tablespoons of flour
1 banana

 ■garnish
whipped cream


1. Coat a Pyrex 2-cup measuring cup with non-stick cooking spray.
2. Put egg and milk into the measuring cup, and mix them.
3. Add protein powder, cocoa powder, baking powder and flour. Mix them thoroughly.
4. Add banana and mix them.
5. Microwave it for 30 seconds. Then, mix everything together.
6. Microwave it for 30 seconds. Mix everything together again.
7. Microwave it for 1 minute.
8. Dump it out on a plate.
9. Garnish with whipped cream.
10. Enjoy!

Top 5 Breakfast Restaurants around Tenjinbashi in Osaka, Japan

       When I was living in Osaka, my workplace was very close to Tenjinbashi. My coworkers and I always worked for long hours and were always hungry when we called it a day, so we sometimes had dinner at restaurants around Tenjinbashi. Because I was also nurse in Japan, I needed to work on night shift as well. After night shift, we had breakfast there once in a while.

     Today, I am going to share with you restaurants which you can eat breakfast around Tenjinbashi, Osaka because I remembered that I was asked by my reader about that before. It's sometimes hard to find these restaurants open very early morning. I hope this information will help someone. :)



Machikadoya (街かど屋)
      If you love Japanese foods, you might like this restaurant, Machikadoya. It's a Japanese restaurant which serves many kinds of combo meals, which is called teishoku (定食) in Japanese, at reasonable prices (around 500 yen to 800 yen). They open 24 hours. Breakfast special menus (370 yen through 460 yen) are only available at 5 through 10 a.m. You can check out their menus here and here
     Once you enter this restaurant, you can buy "meal tickets" at a vending machine just like you do at some other ramen restaurant in Japan. Then, you can give the tickets to staffs there. You can have rice, pickles and tea as much as you want without extra charge there.

Jyuhachiban Honten (十八番 本店)
      Jyuhachian is a Chinese restaurant. You will be surprised that their menu is insane. They serve numerous kinds of meals at super reasonable prices. When I went there, most customers looked like very busy businessmen, and they were smoking there. My coworker loved to go to this restaurant, but I didn't really like the smoke frankly.

Sukiya (すき家)
       Sukiya is a beef bowl restaurant. They open 24 hours and serve bowl menus at very reasonable prices. As I mentioned in my previous entry, there are three major famous Japanese beef bowl restaurant chains, Sukiya, Yoshinoya and matsuya. My most favorite beef bowl restaurant is absolutely Sukiya because they have so many kinds of meals. Their breakfast special meals are only available at 5:00 through 10:30 a.m. You can check out their menu here and here.

Doutor Coffee (ドトールコーヒー)
      If you love coffee, Doutor Coffee is perfect for you. They serve coffee and sandwiches. Their breakfast special (coffee & sandwiches, 390 yen to 440 yen) is available through 10:30 a.m. When I and my coworkers were working late, my boss bought some Doutor Coffee sandwiches for us to take a break. Their sandwiches were very fresh and so good!

Tenroku Udon (天六うどん)
       Tenroku Udon is a Japanese udon noodle restaurant. I have never been to this restaurant, but this is pretty famous because it was seen on TV before. It's located next to Jyuhachiban (十八番), which I mentioned above. This restaurant is a so-called "tachigui udon"(立ち食いうどん), which means there are no chairs, so you need to eat it standing up. Because of tachigui style, they can serve udon at reasonable price (about 200 yen to 500 yen). I would like to try their curry noodle. :)

      If you are a woman and go there alone, I recommend Machikadoya or Doutor Coffee because tachigui and beef bowl restaurants are too casual for women, and Jyuhachiban is pretty smokey. If you are a man or go there with some companies, you can try all these restaurants. When I go to Osaka next time, I will go with my husband, so I can choose from all. :)

Randoseru - One of Japanese Kawaii Items


       A randoseru, which is a Japanese traditional backpack, is a mandatory item for elementary school kids in Japan. It's common that parents (or sometimes grandparents) buy randoserus for their children before they enroll in elementary school. Children in Japan usually use randoserus for 6 years until they graduate from elementary schools. That's why randoserus should be light and extremely durable. Because randoserus are very high quality bags, they are pretty expensive (about 30,000 yen through 100,000 yen each). When I was 6, my grandparents gave me a red randoseru. It was pretty huge for me at age 6, but it wasn't heavy at all. I used the same randoseru until 12. :)  When I was child, red and black randoserus were only available, but now children can choose randoseru from so many different colors. Indeed, my niece chose purple pink one.

      These years, I've sometimes heard randoserus are getting popular outside Japan. People travel in Japan and buy some randoserus as "Kawaii" items for kids to adults. Zooey Deschanel, an American actress and a fashion leader, also wears randoseru as a trendy fashion item. Randoserus are also popular for people who love anime because those are often seen on Japanese animation. That's why those have become the latest must-buy souvenir in Japan and are selling like hot cakes at Narita International Airport. I used to think randoserus are only for kids, but adults also use them outside Japan now. It is very surprising to me.

A Package from Japan!

       Yesterday, my husband and I received a package which his mother sent to us from Japan. When she gets famous sweets or something delicious, she sends a package from Japan to share those with us. If truth be told, she sent packages twice this month! We were excited to open this package last night. :))  Today, I'm going to share with you what she sent to us. If you have never lived or traveled in Japan, you are probably not familiar with these Japanese foods. :)

        This is Shiroi Koibito, very famous cookies in Hokkaido, Japan. I think that she has probably traveled in Hokkaido recently.

      Shiroi Koibito consists of white chocolate sandwiched between cookies. These are pretty expensive but so delicious.

        These are Marumiya Mazekomiwakame, rice seasoning. This is perfect seasoning for rice ball. These packages read, limited time flavor, grilled sea bream.

        Just add this seasoning to cooked rice, and mix them thoroughly. This must be good! :))

      This is seasoning for chirashi sushi, scattered sushi.
Mitsukan Gomoku Chirashi, ミツカン 五目ちらし
     It contains some vegetables such as mushroom and lotus roots, and some seasoning. It's very easy to make as well. Just add it to cooked rice, and mix them thoroughly. Add fresh sashimi and tamago yaki if desired.

      This is a boiled bamboo shoot. I will make cooked rice with bamboo shoot in near future. :)

      This is Japanese plum jelly.

      Last week, my husband and I went to a Japanese supermarket and got Japanese entertainment paper, Weekly LALALA vol.603. I found there was the advertisement of Kikkoman in the final page of the LALALA. It's Hello Kitty Kikkoman Soy Sauce Dispenser 2015 Special Edition!

      I googled whether or not this is also sold in Japan. As far as I know, this is only available in the U.S. in 2015.

Coffee Beans in Three Small Mason Jars

      Yesterday, I bought coffee beans and three small mason jars to store them at three different places, a cabinet, refrigerator and fridge. I would like to see how these will change its freshness and which one is the best place to store. I will see the result a month later. :)
