I've been trying to make cafe de olla, which is a traditional Mexican style of coffee. It is usually make in an earthen clay pot and flavored with a cinnamon stick and piloncillo, which is unrefined whole cane sugar and traditional sugar from Mexico.
What You'll Need (2 Servings)
2 cups of water
1 cinnamon stick
1 to 2 oz of piloncillo (Mexican dark brown sugar)
2 tablespoons of dark roasted coffee beans (medium coarse grounds)
1. Put water, cinnamon and piloncillo into a pan. Simmer until piloncillo has dissolved.
2. Add coffee grounds and simmer for 7 minutes.
3. Turn off the heat. Cover the lid and let steam for 5 minutes.
4. Strain the mixture.
5. Pour coffee into a mug.
6. Enjoy!
