How to Cook Chicken Tsukune - Japanese Chicken Meatballs

       Last week, I cooked chicken tsukune (鶏のつくね), Japanese chicken meat balls. I cooked two kinds of chicken tsukune dishes, chicken tsukune with teriyaki sauce and chicken tsukune soup. They turned out so delicious! It was pretty easy to make chicken tsukune mixture with using a food processor, and you can saute, grill, deep-fry or boil the mixture for your favorite tsukune dish. :)

Saute the tsukune mixture for teriyaki tsukune (テリヤキつくね).
Grill the tsukune mixture for tsukune yakitori (つくねの焼き鳥). 
Deep-fry the tsukune mixture for tsukune age (つくね揚げ).
Boil the tsukune mixture for tukune nabe (つくねの鍋) or tsukune soup (つくねスープ).

 Today, I'm going to share with you how to cook chicken tsukune with you.

How to Cook Chicken Tsukune with Teriyaki Sauce

Ingredients
1/2 Gobo, Burdock Roots (You can also add your favorite vegetables such as carrots, mushrooms or lotus roots.)
1/2 Onion
1 Inch Piece of Ginger
2 Brunches of Nira, Chinese Chives (Optional)
1 lb of Chicken
2 Eggs
Nip of Salt
2 Tablespoons of Katakuriko, Japanese Potato Starch
4 Tablespoons of Oil
4 Tablespoons of Soy Sauce
2 Tablespoons of Mirin
4 Tablespoons of Sugar
6 Tablespoons of Water


1. Chop gobo, onion, ginger and nira in a food processor. Take them out of it. Mince chicken in the food processor. Mix minced chicken, eggs, salt, katakuriko and chopped vegetables in the food processor.


2. Heat oil in a pan over medium heat. Scoop the mixture with a spoon and put it in a pan. Saute them until both sides browned. Take out the chicken.



3. Put soy sauce, mirin, sugar and water into a pan. Simmer it over low heat until sugar is dissolved.

4. Add tsukune into a pan. Simmer it over low heat for 3 minutes. 

5. Serve and enjoy! They will have stronger taste of teriyaki sauce and be more delicious next day.




How to Cook Chicken Tsukune Soup
You can also cook delicious soup with the tsukune mixture. 

Ingredients (4 Servings)
20 fl oz (600ml) of Water
1 Teaspoon of Somi Shantan Deluxe
1 Tablespoon of Shredded Gobo or Your Favorite Vegetables (chopped Chinese cabbage, carrots, green onions, mushrooms and etc)
8 Scoops of Tsukune Mixture
1 Tablespoon of Green Onion
Shichimi Peppers (Optional) 



1. Put water, Somi Shantan Deluxe and gobo into a sauce pan, and bring it to a boil.

2.  Take the tsukune mixture out of the food processor, and add it to a sauce pan. Simmer it over medium heat for 5 minutes.



3. Serve and enjoy!

   Sprinkle green onions and Shichimi pepper if you like.
