How to Cook Stir-Fried Miso Eggplants and Bell Peppers

 

       Last month, I watched this YouTube video and decided to cook this stir-fried miso eggplant and bell peppers. It turned out so delicious! I really like his recipes and have tried some so far. 😋     


      Today, I'm going to share with you how I cook this recipe.


Ingredients for Four Servings

2 Eggplants

A Pinch of Sugar and Salt

2 Tablespoons of Miso Paste

2 Tablespoons of Mirin

1 Teaspoon of Soy Sauce

1 Tablespoons of Sesame Seed Oil

1 Teaspoon of Hondashi

1 LB of Pork (Chopped)

2 Green Bell Peppers (Chopped)

1 Tablespoon of Oil





1. Cut eggplants into quarters lengthwise vertically. Then, make the slices about 1/2 inch (1.25cm) horizontally. Then cut them into 2-inch (5cm) pieces.




2. Put eggplants into a large bowl. Sprinkle sugar and salt into it. Toss well to coat. Let it sit for 5 minutes.


       After 5 minutes, press down firmly with paper towel to remove any excess liquid.




3. Put miso, mirin, soy sauce, sesame seed oil and hondashi in a cup and stir to combine well.




4. Heat oil in a large pan over high heat. Cook pork thoroughly.

      Then, take them out of the pan.



5. Heat oil in the pan over high heat. Put the eggplants in it, and saute them for 3 minutes.




6. Add green bell peppers and oil. Stir-fry for 2 minutes.




7. Add cooked pork. Stir them.




8. Reduce the heat to medium low. Place the cooked vegetables and meat on the side of the pan, and on the open side, put the miso mixture. Cook the mixture for 30 seconds. Then, stir all ingredients to combine.





9. Serve and enjoy!
